The Cathedral in Florence known as the Duomo was started in with the realization that at the time, no one knew how to build the dome, and it would take over years before Brunelleschi finally figured out how to construct what is still the largest brick dome ever created. If you want to use an Acholado, we recommend that you have as a main component any of the mentioned varieties, the other varieties being able to contribute some aromatic complexity. The ovens and machineries are still old and the techniques are still the first ones, using the recipes of the ancestors. And finally the one word that they had waited for, Dismissed!
